Honey is one of nature’s wonders. Honey has been around for a long time and yet we know little about it.
It is nothing more than nectar gathered from the blossoms of many flowers by bees.
It is then taken into the beehive and changed by the worker bees. Worker bees remove the liquid from the nectar.

The finished product is heavy syrup with 12 to 20 percent moisture and 80 to 85 percent sugar. It is a good source of quick energy for the human body.

Honey comes in many flavors depending on from which flower the bees gather the nectar. Milder flavors of honey include Mesquite and Cotton. Orange honey comes from citrus areas. There are many flavors of wild flower honey. The flavors vary from year to year.

Not only are the flavors varied but honey also comes in many different forms. Comb, chunk, fine textured, liquid, and even solid honey that is sometimes called granulated are all forms of honey. We are most familiar with liquid and fine textured forms. Liquid and fine textured honey are recommended for baking.

Baking with honey works well with a few helpful techniques.

Measuring honey can be a problem because of its thickness. A non-stick cooking spray works best to rectify this problem. Just lightly spray on the cup, spoon, or container being used to measure the honey. Lightly buttering or greasing will also work.

Using honey instead of sugar can easily be done by reducing the amount of liquid in your recipe by ¼ cup for each cup of honey that you use. A pinch of salt will help to bring out the sweetness of honey. You will also need to use 1/12 to 1/15 teaspoon of baking soda for each cup of honey you use in addition to the baking powder already in the recipe. This helps to neutralize the acidity of the honey.

An excellent reason to use honey in baking is that goods baked with it are noted for not drying out as easily as those baked using sugar. Honey absorbs and retains moisture. The flavor and moisture retention is best when the baked goods are stored in tightly covered containers after cooling.

Honey boasts many medical benefits.
Honey has aided in bad coughing spells for years.

An effective mix for coughing is to peel and finely chop one pound of onions. Add two ounces of honey and ¾ of a pound of brown sugar in two pints of water. Simmer gently over low heat for three hours. When cool, put in an airtight container and take four to six tablespoons a day. As in any illness, it is best to consult a doctor.

It is also a mild laxative.

People have also boasted that chewing the thin wax cappings sliced from the comb of honey once a day for one month before the start of the hay fever season greatly reduces hay fever symptoms.

Chewing these cappings has also helped sinus sufferers.

Honey and beeswax are used in the beauty industry to soften and heal the skin tissue and help attract moisture to the skin.

Most lipsticks are made with a beeswax base.

Honey can be used in making effective facials.
Mix one or two tablespoons of honey with one-third cup finely ground oatmeal. Oatmeal can be ground in a blender. The amount of honey used depends on your thickness preference. Blend in a teaspoonful of rose water or tap water. Clean face thoroughly. Spread facial mixture evenly over face. Relax for ten minutes to one half hour. Remove with a soft washcloth and warm water. Rinse with cold water or use an astringent. Use this facial once a week for improved softness in the skin. This treatment also works well for oily complexions.

Honey is a natural wonder. The personal favorite of many is a piece of toast with butter, honey, and a glass of milk. Enjoy honey! It is a sweet experience!

Moisture mask with honey:
Mix 2T honey
2t milk

Mix them to form a smooth paste, apply this cream on face and neck and let it dry for 15-20 min. Wash it off with luke warm water.

1 HIGH BLOOD PRESSURE
Ingredients: Mix together in a small jar and consume during the day, as often as you can.

1 teaspoonTurmeric: good for general well being & circulation

SPEEDY COLIC, GAS OR FLATULANCE REMEDY.
Also for: CHRONIC CANDIDA, SHIGELLA, LEAKY GUT OR INTESTINAL PATHOGENS
A fast acting recipe to ease gas and bloating and distended feeling. To treat long term chronic gut infections.
2 tablespoons of honey or molasses mixed with:
4 teaspoons fennel (barishap) 2t turmeric (borrie), 1t clove powder.
Take 1 teaspoon and chew it immediately you begin to cramp and feel bloated. Repeat when needed, as often as you like.
Then take as recommended in 1/4t doses to treat chronic long term infections.
Avoid all yogurt and acidophilus if you have leaky gut, caused by amoeba and protozoa type pathogens and take olive leaf.
Do not eat raw food at night, it causes fermentation. Cut out all starches. Refer to our the fruit and vegetable healing diet.

The following is a list of ailments and conditions for which folklore has found honey to be an effective alternative remedy!

* Wounds or Grazes - cover wound with honey and a bandage. Excellent healer.

* Honey for Burns - apply freely over burns. It cools, removes pain and aids fast healing without scarring. Besides being a salve and antibiotic, bacteria cannot live in honey.

* Bed Wetting - a teaspoon of honey before bed, aids water retention and calms fears in children.

* Sleeplessness - a dessert spoon of honey in a mug of hot milk aids sleep and works wonders!

* Hyperactivity - Honey is a mild sedative with minerals, vitamins, amino acids etc. Replace all white sugar with honey. White sugar is highly stimulating with no food qualities!

* Nasal Congestion - place a dessertspoon of honey in a basin of hot water and inhale fumes after covering your head with a towel over the basin. Very effective.

* Fatigue - dissolve one part of honey in 3 parts of water and keep in the fridge. Honey is primarily fructose and glucose and so it is quickly absorbed by the digestive system. (Honey is a unique natural stabilizer - ancient Greek athletes took honey for stamina before competing and as a reviver after competition).

* Poor Digestion - mix honey with apple cider vinegar approx. 50/50 and dilute to taste with water - aids digestion. (Also reputed to be wonderful for the joints).

* Sore Throats - let a teaspoon of honey melt in the back of the mouth and trickle down the throat. Eases inflamed raw tissues.

* Stress - honey in water is a stabilizer - calms highs and raises lows (true). Use approx. 25 percent honey to water.

* Food Preservative - cakes with honey replacing sugar stay fresher longer due to natural antibiotics. Reduce liquids by approx. one-fifth to allow for moisture in honey.

* Baby's Bottle - four teaspoons of honey to a baby's bottle of water is an excellent pacifier and multi vitamin additive. If baby's movements are too liquid then reduce by half a teaspoon; if too solid increase by half a teaspoon. [see caution regarding infants below].

* Teething - honey rubbed on a baby's gums is a mild sedative and anaesthetic. [see caution regarding infants below].

* Osteoporosis - English research has shown that a teaspoon of honey per day aids calcium utilisation and prevents osteoporosis. Essential from age 50 onwards.

* Long Life - one common fact worldwide is that the most long-lived people are regular users of honey. An interesting fact yet to be explained is that beekeepers suffer less from cancer and arthritis than any other occupational group worldwide. (due to the 72+ trace elements in wild flower honey).

* Migraine - use a dessertspoon of honey dissolved in half a glass of warm water. Sip at start of attack. If necessary repeat in 20 minutes. Always effective (so tip goes) as migraine is stress related. (here is another tantalizing indicator that migraine headaches may be nothing more than a trace element deficiency).

* Conjunctivitis (pus in the eye) - honey dissolved in equal quantity of warm water. Apply when cooled as lotion or eye bath.

IMPORTANT NOTE: YOU MUST NOT GIVE BABIES UNDER 1YRS HONEY!!!

Reason for not giving honey to a baby under 1yrs is:
The US National Honey Board warns that honey may contain spores that can cause infant botulism in children aged one year and younger. Adults and older children are routinely exposed to botulism spores in dust, soil, honey, and other uncooked foods, but are almost never affected by them. In infants' immature digestive tracts, however, the spores are able to germinate and release a toxin.

Symptoms of infant botulism include constipation, lethargy, poor feeding, weak cry, droopy eyelids, and, occasionally, respiratory arrest. By the age of 12 months, infants develop a digestive tract mature enough to handle the toxin

I have found taking a Tablespoon of honey 2x daily has helped with my sore throat.
