LAMB STEW WITH DUMPLINGS

1kg stewing lamb, trimmed of excess fat
250ml water
5ml salt
1 onion, chopped
4 garlic clove, chopped
1 green pepper, seeded and chopped
30ml cornflour 1 potato, peeled and quartered
2 carrots, peeled and sliced
1 litre vegetable stock
freshly ground black pepper, to taste
a few sprigs rosemary, optional

Dumplings
500g flour
5g instant yeast
salt, to taste
sugar, to taste
250ml warm water

1 For the dumplings, mix all the ingredients together in a bowl and cover with plastic wrap.
2 Using your hands, knead the dough for 3 minutes and leave to rise for another 15 minutes. Knock back, then leave to rise for a further 25 minutes.
3 Place the lamb in a pot and add the water. Season with salt and simmer on a medium heat, for about 30 minutes.
4 Brown the meat in its fat and add the onion, garlic and green pepper.
5 Cook together for another 5 minutes, then add the cornflour and stir well.
6 Add the potato and carrots and cook for about 2 minutes.
7 Add the stock and season with freshly ground black pepper. 8 Directly before adding to the stew, form the dough into golf ball-sized dumplings. It makes about 8.
9 Place the dumpling balls on top of the stew and cover with the lid. Cook at a medium heat for about 30 minutes.
10 Serve garnished with the rosemary sprigs.
